It’s been a tough year for Chicago-area restaurants and bars coping with the impacts of the COVID-19 pandemic. Their collective outlook improved slightly over the summer when certain restrictions were eased and indoor dining, at a very limited capacity, was allowed again. But local establishments seemed to be taken aback a couple weeks ago, when Governor J.B. Pritzker rolled back some of those rules, reinstituting the ban on indoor dining in the Chicago-area. As the weather gets colder, outdoor dining may become less attractive to some. But a number of local dining and drinking establishments are innovating with different concepts involving food trucks, take-out options and subscription packages, as they attempt to survive until we can get back to quote-unquote normal.
