A new book shines a light on the history of the French food movement known as nouvelle cuisine. THE SECRET HISTORY OF FRENCH COOKING centers around the late 60s and 70s, but the ripple effect from that time period are still being felt in today’s culinary world. Born in a period of tremendous societal and cultural changes, nouvelle cuisine embraced new ideas related to self-expression and experimentation in the kitchen. The divide among critics over nouvelle cuisine, it’s impact on women chefs and the legacy of the movement are all explored in the new book, which comes from bestselling author Luke Barr.
