“I’ve been thinking about expanding for a long time. You want to do it right, because these are peoples’ memories. And when you’re guarding something that’s 95 years old, you want to make sure it’s done right, because this is generations of people who have come, and it’s got to be done properly.” - The Original Rainbow Cone owner Lynn Sapp talking about why she’s taken her time when it comes to expanding her family business.

Chicago’s iconic Original Rainbow Cone is the type of food item that seems like it was created to be posted on Instagram. The giant ice cream cone features five flavors stacked on top of each other like a mini frozen rainbow. The reality is the Original Rainbow Cone was introduced 95 years ago, long before people took pictures of their food and posted them on the internet.
Mmmm … Rainbow Cone
For decades, the only way to get a Rainbow Cone was to make your way to the southside of Chicago and head to the Beverly neighborhood. But Sapp is now carefully expanding the Original Rainbow Cone empire, a second location just opened in west suburban Lombard and third in Darien is on the way. Customers can all sorts of sweet treats at the ice cream shop, but the most popular item is the Original Rainbow Cone. If you’re unfamiliar, the the legendary cone consists of chocolate, strawberry, Palmer House, pistachio ice cream and orange sherbet.
Just make sure to eat it fast (not a problem for most of us), because those five layers can get melty.
